A better question would be “how many Gods are there?” or “What constitutes a God?” Because as a polytheist I can tell you that if you assume there is only one god, all seeing and all knowing, you are bound to be disappointed. Because that being, if all seeing and all knowing, then is all uncaring. Or why else would the world be the way it is?
